Our Aubergine & Tomato Relish has Just Become Even More ‘Meaty’

This fabulous new recipe is based on the exquisite flavours of Terra Rossa’s Passata encompassing the Levantine flavours of herby and fragrant Zaatar thyme mix, spicy Dukka coriander mix and tangy Sumac citrus berry. It is packed with aubergines, fresh tomatoes and now with added Chickpeas that are caressed with pomegranate and date molasses and just enough chilli to add a touch of heat. So, if the aubergines were not ‘meaty’ enough, then the Chickpeas will certainly provide that extra bite and protein – especially for vegetarians.

Aubergines and Chickpeas are one of the most stable of ingredients in Middle Eastern cuisine and no self- respecting Arabian cook book would be without recipes to include these incredible ingredients be it the popular Baba Ghanoush or the ubiquitous Houmous.

Just like all of Terra Rossa’s hand-made sauces/relishes and spreads, this incredibly versatile product can be eaten hot or cold. Traditionally it is simply warmed up and feasted upon with rice, couscous or Freekeh. It makes pasta an extra-special treat and is the perfect sauce for Moussaka sandwiched in between layers of pasta sheets and cheese sauce.

As a ready to eat sauce, it is delicious eaten cold straight from the jar or topping a fresh dip such as guacamole with toasted pitta bread or tortilla chips. It is the perfect accompaniment to a cheese board and is often enjoyed with one of the fresh Mezza dips such as Lebny yoghurt balls. It is equally as good spooned over mashed or jacket potatoes with a dollop of Greek yoghurt and a sprinkle of freshly chopped coriander - and for those who like it really hot, just add a mouth- watering touch of spice with Terra Rossa’s hot chilli salsa - Dukka Harrisa.
